- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 pound ground beef
- 1 teaspoon Italian seasoning
- 2 medium garlic cloves, minced, or 1/2 teaspoon garlic powder
- 6 ounces tomato paste
- 3/4 cup milk
- 5 ounces of soft cheese, such as Boursin brand Garlic and Herb Gournay cheese
- 1/2 cup grated Parmesan cheese
- 4 ounces gluten-free pasta ~2 cups
Instructions

Heat water and cook the pasta according to package directions.

Heat the oil in a medium-sized saucepan.

Sauté the onions and peppers until the onions are tender. Add the meat and cook until no longer pink.

Add the tomato paste, 3/4 cup water, Italian seasoning, and garlic. Simmer for 5 minutes. Season to taste with salt and black pepper.

Heat the milk and soft cheese in a second saucepan. Stir with a whisk as the cheese melts and add 1/4 cup Parmesan cheese. Add the cooked pasta.

In a 2-quart casserole dish, layer half the noodles and half the meat. Repeat layers. Top with the remaining 1/4 cup of Parmesan cheese.

Bake at 350 degrees for 30 minutes or until heated through and bubbling around the edges.
Notes
Taleggio cheese works very well in this dish also. If you try the Taleggio, increase the Italian seasoning to 1.5 teaspoons, and increase the garlic to 3 medium cloves.
