Taco Pie Casserole

Enjoy this casserole with grilled corn and an icy cold drink.  Add your favorite toppings: green onions, cilantro, avocado, sour cream, lettuce, and tomatoes.

Ingredients

1 pound ground beef

1 tablespoon of oil

1 cup chopped onion

8 ounces tomato sauce

4-ounce can of fire-roasted green chilis, chopped

1/4 teaspoon oregano

1 tablespoon chili powder

2 cups corn chips

15-ounce can of mixed chili beans in mild chili sauce

Instructions

Heat oil in a large saucepan. Sauté the onion until soft, about 5 minutes. Add the ground beef.

Cook the meat until it is no longer pink. Add the tomato sauce, 1/2 cup water, chilis, oregano, and chili powder. Simmer for 5 minutes. Season to taste with salt and black pepper.

Layer ingredients in a 2-quart casserole dish in the following order: meat mixture, corn chips, and beans.

Cover and bake for 50 minutes. Uncover and bake for 5 minutes. Serve immediately.
