Ingredients
1 zucchini
1 small carrot
salt and pepper to taste
Instructions
Slice the zucchini in half lengthwise. Place each half cut-side down on a cutting board. Slice lengthwise into half-inch slices. Cut the slices into two-inch pieces. Peel and cut the carrot into thin slices. Cut into bite-sized pieces.
Heat your stovetop grill (or grill basket if using an outdoor grill). Spray or brush to coat with oil. Add the zucchini and carrots to the grill. Cook on medium heat for 3-5 minutes until golden brown and tender. Season to taste. Stir or flip and cook for an additional 2-3 minutes. Remove from grill and serve.
