Did you eat hamburger casserole when you were a kid? I am talking about the one with layers of ground beef, potatoes, and vegetables covered in tomato soup. I wanted to make this gluten-free but canned soup usually has gluten. After trying a couple of store-bought gluten-free tomato soups, I made the Every Season is Soup Season’s Roasted Tomato Soup recipe. Fresh and canned tomatoes roasted with fresh and dried herbs are a delicious topping for your casserole.

Ingredients
1 tablespoon olive oil
1/2 cup diced onion
1 pound of 85% lean ground beef or turkey
2 cups gluten-free tomato soup (see notes)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup thinly sliced potatoes
1 cup thinly sliced carrots
1/2 cup fresh (or frozen) green beans
Instructions
Heat oven to 350 degrees Fahrenheit.
Season the meat with salt and pepper and allow to sit while you chop the onion and slice the potatoes and carrots.
Heat the olive oil in a medium-sized saucepan. Cook the onion until soft, about 5 minutes. Sear the ground beef and cook until no longer pink. Pour off any excess liquid.
Layer the potatoes, carrots, and green beans in a 2-quart baking dish.
Add the meat and tomato soup.
Bake for 45-60 minutes and serve immediately.
