Ingredients

8 ounces of extra-firm tofu, drained

1 tablespoons olive oil

1 tablespoon butter or plant butter

4 ounces of fresh mushrooms, sliced

2 eggs

1/3 teaspoon Slap Ya Mama Cajun seasoning, or to taste

Instructions

Cut the tofu into 1/2-inch slices and blot with a clean kitchen cloth. Use a fork to mash the tofu into small pieces.

Clean and slice the mushrooms.

In a saucepan, heat the oil and butter over medium heat. Sauté the tofu for 3-4 minutes with minimal stirring until the tofu begins to brown. Push the tofu to one side of the pan. Add the mushrooms and cook for 3-4 minutes until the liquid is absorbed. 

Add the eggs. Cook and stir until the eggs look opaque, about one minute.

Sprinkle the Cajun seasoning evenly over the tofu mixture and serve.
