Salmon Salad with Goat Cheese
Rinse and dry your celery before slicing to keep your sandwich filling from getting soggy.

3 Tablespoons light sour cream
1 ounce goat cheese
1 Tablespoon lemon juice
2 Tablespoons chopped fresh basil
1/2 teaspoon salt
1/8 teaspoon pepper
1 can (6 ounces) salmon
1/2 cup sliced celery
1 Tablespoon capers, chopped
Instructions
Mix sour cream, goat cheese, lemon juice, basil, salmon, and celery in a small bowl. Add capers if using—season with salt and pepper to taste.
Notes
