I first saw this recipe in the July 2009 Fox Valley Celiacs Newsletter. It solved my issue with keeping a loaf of gluten-free bread, a package of gluten-free hamburger buns, and a package of gluten-free hot dog buns (as well as gluten-free bagels and dinner rolls) in my freezer.

Ingredients
1 large egg
2 tablespoons brown rice flour
1 tablespoon almond meal
1 tablespoon flax meal
1/2 teaspoon baking powder
3/4 teaspoon sugar
1/2 teaspoon cocoa powder
dash salt
Instructions
Spray a large custard dish (about 5 inches across or ramekin that will make a large bun-sized loaf) with non-stick spray. Crack egg into dish and stir with a fork until well mixed. Mix together rest of ingredients in a separate bowl. Add to egg; stir well. Cook on high in microwave for 85 seconds (longer in smaller microwave ovens). Loosen around the edges with a knife; remove from dish; cool.
