Zesty Baked Chicken with Soy Sauce and Lime Juice Marinade

Ingredients

3 1/4 pounds (8 or 9) boneless, skinless chicken thighs

For the Marinade

1 teaspoon lime zest

Juice of 1 lime (34 Tablespoons)

1 Tablespoon orange zest

1 orange, peeled and chopped (1/2 cup)

1/3 cup soy sauce (check labels if you need a gluten-free version)

4 cloves garlic, chopped

2 teaspoons coriander

1/2 teaspoon red pepper flakes

1 1/2 Tablespoons brown sugar

Instructions

Prepare the marinade ingredients and place them in a medium-sized bowl.

Mix until the brown sugar is dissolved into the liquid ingredients. 

Pour the marinade over the chicken, cover, and refrigerate for 4 hours or overnight.

Place the chicken in a 9-inch by 13-inch baking pan. 

Heat your oven to 400 degrees Fahrenheit. 

Bake the chicken until it begins to brown- approximately 15 minutes. Reduce the oven temperature to 350 degrees and bake for 20-25 minutes or until the chicken reaches a minimum internal temperature of 165 degrees.
